The owners, Katie Sullivan and Kirby Collins joined forces to bring their passion for great coffee and food together. From fresh, pour-over coffee, vegan and gluten-free baked goods from local businesses, to charcuterie boards and a liquor license – there is no shortage of variety when you walk in the door.
Kirby is passionate about coffee, and this is clear when you visit their shop. They offer three roasts exclusively from a local roasting company: one dark and two medium roasts. The dark blend is full-bodied, smooth and traditional. The medium roasts are sourced from Colombia and Ethiopia, with caramel undertones in the former and natural sweetness of blueberry in the latter. Rather than batch brewing their drip coffee; they freshly grind the beans after you place your order, then individually pour it into your cup! Providing you with a high-quality cup of coffee every time you order. As well as serving great coffee, which is Kirby’s focal point, Katie is passionate about the food. From vegan and gluten-free options such as tasty Nanaimo bars and mouth-watering Dutch almond shortbread to fresh and filling charcuterie boards (they offer meat and vegan choices), the options are endless. They create a sandwich of the day, which is served on a perfectly flaky croissant from a local bakery. This shop doesn’t just sell coffee; they even have a liquor license! Katie and Kirby order local and deliciously refreshing craft brews as well as offer a variety of wine. Having a liquor license helps this coffee shop cater to different needs of the locals, whether it is to enjoy some drinks with friends or sip on a coffee while cramming for an exam.
